Baked Aubergine Boats 


I love love love making these Aubergine ‘Boats’

They’re super easy to make and you can literally stuff them with anything and everything you want to suit any dietary requirements;

They can be a vegan, vegetarian or ordinary meat dish depending upon your filling of choice 🙂

They form the basis of a very nutritious and filling meal which can eat all to yourself or have half to share with someone else as a lighter meal or side dish too!

All you need is:

-A large aubergine

-Some coconut oil (I use LucyBee)


-Then whatever filling of choice you desire 🙂


-Cut the aubergine lengthwise into two halves

-Wrap the halves in foil and create a sealed airtight ‘bag’

-Pop them in oven on 180 degrees for approximately 40 minutes

-Unwrap the foil ‘bags’ and brush a little coconut oil on the inside

-Grill the inside for about 10 minutes

-Once cooked, scour the aubergine lengthwise and add whatever filling you’ve chosen

-(I like stuffing them with sweet potatoes, veggies, quinoa etc all cooked before hand in a Mediterranean tomato sauce)

-You can them pop them back under the grill if you like and add cheese/ more sauces

The possibilities are endless really so get creative 😀
