Coconut Maca Flapjacks (Vegan)
As i’ve had the luxury of training mid-morning over the summer break, I always love to grab a convenient bar or snack to have after my breakfast (as I eat super early) but pre-workout for some energy.
I woke up this morning totally out of bars or snacks and literally threw this together in 5 minutes with minimal ingredients I had in my cupboard.
I get a lot of requests for simple and easy recipes, this ticked all the boxes so I simply had to share it!
They also turned out vegan, glutenfree, refined sugarfree and DE-LICIOUS 😉
If you love coconut and you love flapjacks, these are for you. I’ve also added Maca powder for a superfood boast but feel free to omit it if you don’t have any, they are super healthy as they are 😀
Ingredients (makes 6):
–140g Jumbo Oats (I used Mornflake)
–50g Coconut oil (I used The Good Stuff Organic)
–1 TBS Maca powder (I used The Good Stuff Organic)
–2 TBSP Coconut Merchant syrup
–40g Sukrin Gold (can sub for any sweetener)
-Coconut syrup to drizzle (optional)
-Sprinkles to decorate (optional)
1.Comine the Oats, Maca powder and Sukrin Gold in a mixing bowl then pop to one side
2.Gently warm together the Coconut oil and Coconut syrup in the microwave, stopping every few seconds to stir through
3.Combine the wet and dry ingredients to form a sticky thick mixture
4.Line a square/rectangular dish with either coconut oil or greaseproof paper
5.Pop the mixture into the dish and press down firmly then place in the fridge for 1-2 hours to set
6.Remove and cut into 6 squares (or more/less depending on how big you want them to be) add whatever toppings you desire!
SO simple eh?!
Even my housemate adored them and she’s not too fussed on sweet treats at all 🙂
You can eat them pre- or post-workout, as a snack at anytime during the day, with a cup of tea as a sweet treat!
