Sweet Potato Pizza Base

Happy Friday you lovely lot! 🙂

Heres a quick and easy recipe for you to try this weekend if you fancy making your own pizzas

I recently tried sweet potato wraps by BFree foods which is probably what inspired this recipe experiment of mine.

The wraps are delicious however a little on the expensive side as you only get 6 per pack and a little too flimsy for pizza bases as they’re too thin (for me anyway) 😛

I’m someone who loves my toppings so I need a thick strong base to hold them all

So as always, I ventured off to make my own…

And they were a success! Best of all, they’re super high in Vitamin A, fibre & flavour thanks to the amount of sweet potato per base 🙂

In the ingredients list you’ll notice I’ve provided a vegan and non-vegan option to make the base, having tried and tested either option, I can confirm both work just as well 🙂

 

Here goes…

Ingredients (makes one large pizza):

130g Puréed sweet potato

35g Buckwheat flour

10g Almond Flour (I use Sukrin)

Pinch of Garlic powder

Half a teaspoon of dried mixed Italian herbs

1/2 teaspoon Coconut oil (I use The Good Stuff Organic)

2 egg whites OR 1 TBSP flaxseed & 3 TBSP water (Vegan Option)

Pinch of Baking powder

Splash of almond milk

Method:

1.Puree your cooked sweet potato first or you can use shop bought to save time

2.Add either your egg whites or flaxseed mix, melted coconut oil and splash of milk. Blend until smooth

3.Mix together your flour, seasonings and baking powder then add to the purée

4.Combine everything using a wooden spoon, mix till you have a slightly running dough texture

5.Spread the mix evenly on to an oiled pizza base or grease proof paper then pop in the oven at 180 degrees for 10 minutes

6.Remove, spread on your tomato purée, add your toppings of choice then place back In the oven for a further 10 minutes until the edges are golden brown and crispy!

The beauty of this base is that you can make it as thick or thin as you want or even make multiple mini pizzas too!

It’s cheap, quick and super easy trust me 🙂
