Lotus Biscoff Chocolate Tarts

I hope you are feeling as festive as me now the month of December is well underway 🙂
It’s absolutely no secret that i’m well and truly obsessed with Lotus Biscoff Biscuits and well, if you haven’t tried them or the spread they make, you haven’t lived (bold statement I know!) 😉
These chocolate tarts are actually vegan too as this recipe is completely dairy-free and the base is made with Protein Pow’s brand new 1 ingredient Pea Protein!
They’re honestly delicious, you will not regret giving them a go!
Ingredients to make 2 large tarts:
For the Biscuit Base:
-1 Scoop (30g) Protein Pow Pea Protein
-8 Lotus Biscoff Biscuits
-20ml Coconut oil (I use The Good Stuff)
-15ml Maple syrup
Chocolate Biscoff Filling:
-100g Tinned Full fat Coconut Milk
-2 TBS Lotus Biscoff Smooth Spread
-40g Cacao (I use The Good Stuff)
-1 TBS Cinnamon
-1 TBS Sukrin gold
-20ml Salted caramel TRKG Healthy living syrup
Optional toppings:
-Dark chocolate sprinkles
-Lotus Biscoff Biscuits
Method:
For the biscuit base…
1.Crush the Lotus Biscuits and mix with the Protein Powder, add the Coconut oil and Maple Syrup. Divide the mix in two, press the mixture down hard and pop in the freezer for 10/15 minutes to set
2.Scoop out 100g of thick tinned coconut milk into a bowl then stir through the Lotus Biscoff Spread, Cacao powder, Cinnamon, Sukrin gold and Syrup till you get a thick mixture.
3.Remove the base and spread on the filling. Add your toppings of choice then devour!
They can be kept in the fridge to chill if you’re not ready to eat them straight away but good luck with the willpower not to do so 😉
