Spectacular Chocolate Christmas Cake

I could not be more excited to share this Christmas cake with you πŸ™‚

Why? Because not only am I super proud of this recipe, it’s 100% refined sugar free, high protein, high fibre, showing you how healthy really can be delicious!!

It’s the deepest, thickest, gooey-est most chocolatey cake you’ll ever make.

Two huge layers with a centre of gingerbread coconut cream, topped with more coconut cream, sugarfree marshmallows and homemade gingerbread men!

It’s even more delicious than it sounds πŸ˜‰

Ingredients 

For the cake: 

-300g Sukrin Almond Flour 

-100g Sukrin Granulated Sweetener 

-6 Eggs

-100g Libby’s Pumpkin Puree

-50g Chocotella

-1 TSP Baking powder

-80g Hershey Cocoa Powder 

-10g Lucy Bee Coconut Oil 

For the gingerbread icing:

300g Tinned Full Fat Coconut Cream

-80g Sukrin icing sugar 

-20ml TRKG Healthy Living Gingerbread syrup 

For the gingerbread men:

-35g Vitafibre Powder

-15ml TRKG Healthy Living Gingerbread syrup 

-30g Vanilla Reflex Whey 

To decorate:

 -A pack of La Nouba Sugarfree Marshmallows 

-Candy-cane sprinkles

 

Method:

For the cake:

1.Mix together the dry ingredients, beat the eggs with the pumpkin puree, Chocotella and coconut oil then combine the wet and dry ingredients. Divide the mixture into two grease proof dishes then pop in the oven for 20 minutes at 160 degrees.

2.Once a toothpick comes out clear from the inside of the cakes, remove and allow to cool. Mix together the coconut cream, icing sugar and gingerbread syrup then spread half on top of one of the cakes. Place the other cake on top, then add 2/3 of the icing sugar mixture.

For the gingerbread men:

1.Mix the vitafibre with the syrup to create a thick mix ensuring there are no lumps then stir through the whey. Press down the mix into gingerbread cookie cutter moulds sitting on grease proof paper then pop in the oven on 150 degrees for 8 minutes (repeat to make as many men as you want)

2.Once golden brown, remove and allow to cool, add some of the leftover gingerbread icing sugar and decorate with sprinkles.

Assemble the cake

1. Poke the marshmallows through toothpicks and place on top of the cake, push the gingerbread men down if balancing on top of the cake or stand up surrounding the cake. Cover in sprinkles!
