Cannellini Bean & Sweet Potato Shakshuka!

Those of you who follow me on Instagram will know just how obsessed i’ve been with making Shakshuka’s recently…

Not only are they the most comforting thing to come home to on a cold evening, they make the perfect breakfast or brunch PLUS are so incredibly healthy and good for you! πŸ™‚

I always make the base the same but experimented with the addition of sweet potato and Cannellini beans to make it more substantial as a dinner meal idea (you can play around with what you choose to add) πŸ˜‰

Cannellini beans are an underrated little superfood; high in fibre, protein and antioxidants   also.

The best things is you don’t need a single ingredient that you probably don’t already have in your kitchen meaning it’s also super cheap if you’re on a student budget like me!

So let’s get started πŸ™‚

Ingredients:

2 Large eggs

400g Tinned chopped tomatos

200g Sweet potato

100g Tinned Cannellini beans in water

A Handful of fresh kale

100g Baby button mushrooms

10 Cherry tomatos

100g Courgette

100g Red onion

30g Concentrated tomato puree

Garlic powder or fresh garlic

TSP Paprika

TSP Mixed herbs

TSP Turmeric

TSP Cumin

Fresh rocket or spinach to garnish

Method:

1.Simply dice the sweet potato and pop in the microwave for 4 minutes, turning half way through

2.Chop the onions and courgette, sautΓ© with garlic, the tinned tomato’s and the tomato puree then add the baby button mushrooms. Add a little water then allow to simmer for a few minutes before adding the kale.

3.Add the paprika and herbs to taste then transfer to an oven proof dish, make two little dips then crack your eggs into the centre, surround with the sweet potato, beans and cherry tomato’s.

4. Pop in the oven to bake on 150 degrees for approximately 10 minutes, remove when the yolks appear darker. Garnish with rocket or spinach and tuck in!

I’ve also been obsessing over rye bread or rye crackers covered with a little marmite to dip into the yolks. It’s honestly delicious, don’t knock it till you try it πŸ˜‰

Alternatively you can enjoy it as it is but the best part about yolks is dipping into them, am I right?
