Salted Caramel Almond & Peanut butter with Caramelised Almond Chunks


Happy Holidays my lovelies!

I hope you all had the most magical & special Christmas with your loved ones this year, mad how it’s over so quick isn’t it?!

 I’ve actually had this recipe drafted up since July believe it or not but what a better time to share it, than now? 

If you have left over nuts to use up and have always wanted to try making your own nut butter then look no further, it’s so much easier than you ever thought especially as I’ve included step by step photos for you…

I’m really not one to gloat but I am genuinely so proud of how this turned out! 🙂

The most delicious and smooth salted caramel, almond AND peanut butter with little chunks of caramelised almonds (aka HEAVEN) mixed through…

Lower in fat than your regular butters, higher in protein and absolutely minimal ingredients too- you seriously must try this! 😉

Ingredients (makes approximately 320g) :

100g Blanched almonds

60g Regular skin on almonds

100g Blanched peanuts

15g Coconut oil (I used LucyBee)

3 Tablespoons Sukrin gold

1 Tablespoon pink Himalayan salt

1 Tablespoon honey/maple syrup

2 Scoops Quest salted caramel Protein powder
(can be subbed for any salted caramel protein)


1.Soak your blanched almonds and peanuts for a few hours in warm water, then drain and discard the liquid

2.Blend your regular almonds (skin on) for a few seconds just to break them down slightly then stir in the Honey/Maple syrup and 1 Tablespoon of the Sukrin Gold

3.Pop this mixture in the oven at 150 degrees for approximately 10 minutes (be careful not to burn them!)


4.Remove and allow to cool as you start making your butter- add the blanched peanuts and almonds to your blender and blend, now be patient, it does take a while but you can leave the blender running

5.Every now and then you’ll need to push down the sides until a ball starts to form

6.Add your coconut oil, remaining 2 Tablespoons of Sukrin and your salt at this point then let the blender run for a few more minutes


7.When it starts to look a little something like the photo above, add the 2 scoops of Quest Nutrition Salted Caramel and turn back on for a further 5 minutes. You should end up with a mixture that looks as dreamy as this:


8.Now you’re ready to stir through your Caramelised chunks of almond


Finally, pop in an airtight container and enjoy as you wish 🙂
I added mine to my proats, tried it on toasted rye bread and even had it on top of some Ice Cream!

I’m honestly so so proud and happy with this recipe, its so easy to make and tastes UNREAL 😉
