Hands up if you love waffles?!
Waffles on the weekend are a must for me!
So these are (potentially) the healthiest waffles you’ll ever eat 😉
And I don’t mean that because they dont have any added refined sugars/ trans fats etc
But the fact that they’re secretly incredibly nutrient dense – you’ll find out how when you read the ingredients BUT don’t be sceptical, trust me on this!
Best thing about super healthy waffles? The ‘not to healthy’ toppings you can add because life is all about balance right?
100g Red Kidney Beans in water
1 scoop of Vivo Life UK Cacao plant protein
10g Cacao powder (I use The Good Stuff Organic)
10g Coconut flour (I use The Good Stuff Organic)
10g Almond flour (I use Sukrin)
80-100ml milk (I use Alpro Almond Milk)
1 TSP Truvia
A pinch of baking powder
1.Pre-heat the oven to 150 degrees or pre-heat your waffle maker, drain the beans from the water then blitz them together with the almond milk till you get a think puree.
2.Add all the dry ingredients to the beans. If it seems a little too thick, add a splash more almond milk.
3.Pop the mixture either in a waffle maker or in a silicone waffle mould in the oven for 15-18 minutes.
4.Remove then add all the toppings!
Simple, quick and easy and SO good for you!
Kidney beans are incredibly healthy; high in fibre, potassium, protein.. the list goes on
