Creamy Rice Pudding
Creamy Rice Pudding with a Salted Caramel Cashew swirl
If you watch any American YouTubers (especially the fitness fanatics) you may have noticed they eat a lot of ‘Cream of rice’
Now i’ve been dying to get my hands on some so when Go Nutrition asked me if i’d like to try their Brand new Cream of Rice, I jumped at the opportunity to do so and couldn’t resist a childhood favourite recipe featuring it to!
It came out so dreamy, plus it has a little extra protein in it too, to keep you feeling fuller for longer 😉
–300ml Cashew Milk (I used Alpro)
-50g Cream of Rice
–20g VivoLife Vanilla Perform Protein (optional)
–30g Truvia or Sukrin Sweetener
-Himalayan pink salt
–1 TSP Cinnamon
–30g Smooth Cashew Butter
–5g Coconut Oil (I use The Good Stuff Organic)
To make the rice pudding:
Combine the cream of rice with your sweetener of choice, a pinch of salt and 1 TSP of cinnamon in a saucepan. Pour over your milk then simmer on a low heat till it thickens (stirring regularly). Remove from the heat then stir through your Protein Powder vigorously.
To make the salted caramel cashew butter:
Melt the Coconut oil and stir into the cashew butter, once combined add a pinch of salt and 1 TBS of Salted Caramel Syrup. Swirl through the cream of rice then add extra cinnamon if desired.
Grab a spoon and tuck in whilst it’s still warm!
This doubles up as both a breakfast and dessert, it’s so comforting and filling (not to mention super healthy!)
You can also try adding some dark chocolate chips or shavings – even some crushed nuts or berries, the possibilities are endless.
