Blueberry Mini Muffins!

White Chocolate Blueberry Mini Muffins

I know Autumn screams Pumpkin everything to most but personally, there’s something about Blueberry Muffins that has the same effect on me!

I think it’s the warm cinnamon smell paired with that comforting feeling you get when eating one.

I always make recipes based on my cravings so naturally I went ahead and created a recipe where you can eat the entire batch for less calories than a single shop bought muffin 😉

You barely need any ingredients too, you’ll see..

Ingredients (makes 5):

-15 Fresh Blueberries

-60g Oat flour

-40g Almond flour

-60g 0% Greek Yogurt

-2 Egg Whites

-30ml Milk of choice (I used Almond)

-1 TBS Coconut Oil (I use The Good Stuff)

-1/2 TSP Baking powder

-1/2 TSP Cinnamon

-1 TBS Sweetener

-5 drops White Chocolate Flavourdrops

Method:

1.Simply blend together all your ingredients (except the blueberries) till you have a cakey mixture.

2.Divide between silicone cake moulds and drop 3 berries into each muffin.

3.Place into pre-heated oven at 140 degrees for 15 minutes, remove and enjoy!

The beauty is, you can divide the mixture into however many servings you like, you could even make yourself one giant muffin if that takes your fancy 😉
