Triple Chocolate, Salted Caramel Pumpkin, Peanut Butter Bars!

Quite the mouthful right? And yes, they truly are as epic as they sound.

You all went crazy for these on my instagram (@VeesFitnessFood– get following if you don’t already) so i’m delighted to finally share the recipe with you!

Delicious and indulgent yet so healthy, totally vegan, gluten & refined sugar-free too if you can believe it 😉

The perfect Autumnal recipe, just in time for Halloween when you’ve got plenty of Pumpkin to use up too.

Let’s get started, I know how eager you all are to give these a go too!

Ingredients:

For the bottom layer

-4 TBS Cacao powder (I use The Good Stuff)

-2 TBS Coconut Oil (I use The Good Stuff)

1 TBS Maple syrup

1 TBS Smooth Peanut Butter (I used Pip & Nut)

For the pumpkin layer

150g Pumpkin Puree

-Splash of Milk (I used Almond Milk)

-30g Salted Caramel Protein powder (I used VivoLife)

-2 TBS Maple Syrup

-1/2 TSP Cinnamon

For the peanut butter layer

-100g White Chocolate (I used Vegan White Chocolate from H&B)

-2 TBS Smooth Peanut Butter (I used Pip & Nut)

For the top layer

-130g Dark Chocolate (I used Doisy & Dam)

-1 TSP Coconut Oil  (I use The Good Stuff)

Method:

1.Start at the bottom, melt your coconut oil and stir through your Peanut butter, add the maple syrup and cacao powder then set in the freezer for 15 minutes.

2.Meanwhile, blend your pumpkin, salted caramel, cinnamon and syrup. Add this later on next.

3.Melt down your white chocolate, stir through the peanut butter then pour this onto your pumpkin layer. Set for 30 mins in the freezer.

4.Finally, melt together your dark chocolate and coconut oil. Pour onto the white chocolate layer, set in the freezer for 30 mins. Remove and cut into bars or bites, whatever you prefer 🙂
