Egg White Breakfast Burrito

I initially threw this recipe together because I fancied something spicy and savoury for brunch, since then, a new obsession has arisen!

I know I call it a breakfast burrito but the truth is, you can eat it at any time of the day. In fact, once I made this meal for breakfast and for lunch on the same day because it really is THAT good!

You must give it a go

Ingredients:

5 Egg whites

-Half a red onion

100g Mushrooms

120g Tinned Mixed Beans

-Handful of Spinach

1 TSP Tomato puree

100g Chopped tomatoes

1/2 TSP Smoked Paprika, Chilli, Black pepper, Garlic powder

1 Light Dairylea Cheese Triangle (or any cheese of choice)

Method:

1. Sautee your onions, mushroom, beans with the tomatoes and puree then add the spices.

2.Cook your egg whites on a very high heat in a large flat frying pan.

3.Add a handful of spinach to one half of the egg whites then layer on the beans and cheese of choice. Fold over then keep on a low heat for 3 minutes.

 

As simple as that!

Filling, nutritious and absolutely delicious- feel free to get creative with the filling too.
