Coconut & Dark Chocolate Macaroons

An all time favourite with a little twist! As a massive coconut fan, i’m simply making my way through all the things one can do with it 🙂

This week, I fancied these gorgeous Macaroons! I always find the shop bought ones quite dry and a little too sweet for my liking due to the added unnecessary extra sugars so decided to tweak the recipe & make it healthier.

They’re also paleo, gluten-free and a real show-stopper to make for friends and family if you have any up-coming christmas parties 😉

Ingredients (makes 6): 

-200g Desiccated coconut

-60g Dark Chocolate (I used Lindt 85%)

-3 Egg whites

5g Coconut Oil (I use The Good Stuff)

-40g Honey

-1 TSP Vanilla extract

-Pinch of baking powder

-1/2 TSP Salt

Method:

1.Preheat the oven to 150 degrees then combine your coconut, honey, coconut oil, vanilla, baking powder and salt. Gently whisk the egg whites then fold them in.

2.Divide into 6, roll into balls then flatten onto greaseproof paper. Pop in the oven for approx 20 minutes (until the tops look golden).

3.Allow to cool then melt down your dark chocolate using a bain-marie or microwave, dip the bottom of the macaroon into the chocolate then place onto greaseproof paper then into the freezer for at least 10 minutes to allow chocolate to set.

I even drizzled them in some chocolate syrup for a little extra indulgence but feel free to get creative with whatever you fancy!
