The perfect Chocolate Chip Cookies! (Vegan)
I think it’s wonderful so many people are giving Veganuary a go! Even if you don’t follow it strictly, it’s a great opportunity to get more fruit and vegetables in. That being said, even your favourite treats can be created with fully plant based ingredients such as these perfect chocolate chip cookies! You’d never even know they weren’t ‘regular’ cookies, give them a go and taste test them on a friend/ family member then tell them they’re vegan and I guarantee you, they won’t believe you.
The ingredients are so simple too and I bet you already have everything.
Ingredients:
-240g Flour
-150g Sukrin Gold (or regular brown sugar)
-60g Coconut oil (I use The Good Stuff)
-60g Smooth cashew butter
-5 TBS Water
-2 TSP Vanilla extract
-1 TSP Baking powder
-Pinch of Baking soda
-Handful of Dairy-free chocolate chips
Method:
1.Mix the flour, Sukin gold (or sugar) baking powder and soda then pop to one side. Melt the coconut oil and combine with the cashew butter and vanilla. Add the wet ingredients to the dry ingredients then the water a tablespoon at a time till you get a thick dough mix. Fold in the chocolate.
2.Set the oven to 180 degrees (or 160 if you have a fan oven) divide the dough into the amount of balls dependent on how many cookies you want to make, place on baking paper then pop in the oven for 12-15 mins until the edges of the cookies look golden.
3.Let them cool before tucking in (easier said than done, I couldn’t do it!)
They also keep really well (and just get a bit crunchier) IF you can resist them that is!
