Peanut Butter Fudge Chocolate Chip Brownies (Vegan)
Hello lovely people!
Who doesn’t enjoy a warm delicious brownie, especially topped in Peanut butter and more chocolate?! As always, I love my recipes to be as minimal ingredient as possible to make it easy for you guys to recreate! These are also Vegan and Gluten free (if you choose the gluten-free options) so perfect for anyone and everyone with any dietary requirements 🙂
-250g Smooth Peanut Butter (I love Pip&Nut)
-1 Large or 2 Small Bananas
-200g Oat Flour
-50g Cacao powder (I use The Good Stuff)
-150g Sukrin Gold (or Brown Sugar)
-70ml Almond milk
-1/2 TSP Baking powder
-1 TSP Vanilla extract
-150g Chocolate chips
1.Mix your oat flour (just blend regular oats) with the cacao powder, Sukrin gold, baking powder and pop to one side.
2.Blend your banana(s) with the peanut butter, vanilla extract, combine both mixtures then slowly add your milk till you get a thick brownie batter consistency.
3.Stir through your chocolate chips then pop in the oven at 180 degrees for 20-25 minutes. I like mine slightly underdone which you can check by poking the brownies using a thin knife which should have a little residue on it.
After they cool, top them with whatever you like! I obviously added more Peanut Butter but crunchy this time 😉
