BBQ Bean Veggie Chilli


If you’re unfortunate to have a job which means you get back home quite late and don’t really have time to think about cooking anything fancy, it’s batch cooking which certainly helps ensure you have a delicious and nourishing meal waiting for you in 2 minutes.

I make this recipe most sundays, I portion it then either have it for lunch or dinner with almost any carb source you can think of; pasta, potato, rice, even noodles! It even freezes well so you can always keep a cheeky few portions frozen away in times of emergencies.

I always get inundated with messages asking for the recipe and I thought it was finally time to put it on my website for you all to enjoy! It’s so versatile so don’t be afraid to adapt it to suit you, whether that be omitting the Quorn all together or even using meat.

Ingredients (makes 4 portions):

-300g Quorn Veggie Mince (use Pork/Beef/Lamb or omit totally if you prefer)

-A tin of Mixed Beans

-1 Large red onion

-1 Clove Garlic

-1 Large courgette

1 Large green pepper

-100g Peas

-100g Sweetcorn

-400g Tinned chopped tomato

-50g Tomato puree

-2 TBSP BBQ seasoning

-2 TBSP Paprika

-1 TBSP Cocoa powder

-Chilli flakes to taste


1.Fry your onion and garlic till golden then add the chopped courgette, pepper and quorn mince.

2.Soften for about 5 minutes, add the sweetcorn, peas, beans, chopped tomato and puree, all the seasonings, then add 200ml of water and allow to simmer and reduce for 15-20 minutes on medium-low heat.

3.Serve up with anything you fancy!
