Caramelised Banana Ice Cream (Vegan)
I scream! You scream! We all scream for Ice-cream!
Okay maybe not your typical kind but when it tastes and looks exactly the same PLUS turned out accidentally vegan, it would be rude not to 😉 I bet you’ve never tried caramelized banana ice cream before either, what a genius idea some may say..
This simple recipe i’m sharing today contains no dairy, takes minutes to make with minimal ingredients and doesn’t require an ice cream maker, say what?
It’s bananas. Literally.
I recommend making a double portion because I guarantee you’ll be going back for more…
Ingredients:
-2 Ripe bananas
-10g Coconut oil (I use The Good Stuff)
-50g Coconut cream
-100g Tinned Coconut milk
-25g Sukrin gold (or brown sugar)
-10g Maca powder (I used Vivolife)
-1/2 TSP Salt
Method:
1.Slice your bananas into coins, cover in coconut oil and sukrin gold (or brown sugar) and fry till golden on both sides. Place to the side to cool.
2.Once cooled, add to your blender with the coconut cream, milk, salt and maca powder then blend till smooth. Pop into an air-tight container to set in the freezer for 2-3 hours.
3.Remove, devour and enjoy!
Oh Wow!! This sounds so amazing! I make my banana ice cream every sunday night with chocolate protein powder – I am going to do the bananas this way and have it “chocolate caramelized nicecream”! Thank you sweetness!
