White Chocolate Frosted Carrot Cake
How glorious is this beautiful weather? All the more so when you can enjoy it with a slice of white chocolate frosted carrot cake right?
I’ve never been the biggest carrot cake fan to be honest, let me tell you why. I’m not actually a fan of dried fruit nor do I like to cheese (to many peoples disbelief) but I was really craving the warm comforting cinnamon taste and thought hey, let’s put my own personal spin on a classic recipe to make it something I would love- et viola, this beauty was created, let’s get baking shall we?!
-2 Cups Almond flour
-1 Cup Regular flour
-1 Cup Grated carrot
-1 Cup Almond milk
-1/2 TSP Baking powder
-1/2 Cup Maple or Golden syrup
-1/4 Cup Coconut oil (I use The Good Stuff)
-1 TSP Cinnamon
-1/2 TSP Nutmeg, Ginger, Cardamom
For the frosting
-1 Cup White chocolate
-1/2 Cup Light cream cheese
1.Finely grate your carrots then stir in all the dry ingredients, mix well then add the eggs, syrup, oil and finally the milk till you reach a think batter consistency.
2.Pop in a greased tin or line with baking paper and place in the oven on 160 degrees for 35 minutes. Allow to cool then melt your white chocolate, stir through the cream cheese then frost and devour!
