Chocolate Cinnamon Squares
How is everyone finding this heat wave? Unbelievable right?! I don’t even remember the last time we had a full summer in the UK but i’m absolutely loving and making the most of it!
I know the heat makes us crave all things cold but I also think dessert is wanted regardless of the temperature outside- these cinnamon squares would be the perfect afternoon tea or picnic accompaniment don’t you agree?
That’s what I had in mind with the recipe, something you could make and take with you on a picnic, something for the whole family (especially cinnamon lovers!) plus, the added puree increases the fibre content which is a cheeky way of sneaking it in if you find it hard to do so.

Ingredients:
-250g Oat flour
-100g Coconut sugar (use stevia for sugar free)
-1 Egg
-50g Finely grated carrot
-50g Carrot puree
-20g Coconut oil (I use The Good Stuff)
-2 TBS cinnamon
-1 TBS Cacao powder
-1/2 TSP Nutmeg
-1/2 TSP Baking powder
-1 TSP Vanilla extract
-Pinch of salt
-220ml Almond or soy milk
Method:
1.Pre-heat your oven to 180 degrees then mix your dry ingredients in a bowl.
2.Add the egg, carrot puree and grated carrot then slowly add the milk- be sure to keep the mixture thick.
3.Trasfer to a lined loaf tin and bake for 25-30 mins until golden brown- allow to cool then drizzle in chocolate and enjoy!!
