Dark Chocolate Stuffed Donuts (Vegan)

Dark Chocolate Stuffed Donuts (Vegan)

Thick, dense, sugary, chocolate stuffed classic style donuts!

A vegan twist on a classic recipe i’m sure everyone knows and loves, perfect to make for an event, treat or simply even for yourself as they keep so well in an air-tight container.

As much as I love making ‘healthier’ alternative recipes, once in a while you just need the good old deep-fried full fat version as a treat because there’s nothing wrong with everything in moderation.

I definitely think I out-did myself with making these vegan too- you’d never know they were dairy free and you’d certainly not miss it either! The dark chocolate centre gives them an extra element of indulgence too, making them serious show-stoppers all round. Give them a go and let me know what you think! IMG_7864

-250g Plain flour

-100g Sugar or Sukrin for sugar-free

-50g Vegan butter or dairy-free spread

-3g Vanilla extract

-5g Yeast extract

-120ml Soy milk

-2 TBS Sunflower oil

-1 TSP Baking powder

-½ TSP Salt

-150g Dark Chocolate (melted)

1.Gently melt the butter then add the milk and oil and pop to the side.

2.In a blender, add your flour, sugar, salt, baking powder and yeast extract. Add your wet mix then blend till a thick ball of dough forms. Cover and allow to rise for a few hours.

3.Using your hands, roll dough into little flat balls (make sure to place flour on your hands to avoid getting sticky!)

4.Heat up oil in a deep pan, you know it’s hot enough when bubbles start to rise.

5.Gently lay the donuts into the oil using a spatula (do this one at a time) and fry for about 2-3 minutes on each side until golden brown.

6.Roll the donuts into a bowl of the sugar when still warm then allow to cool, once cooled pierce a hole into the middle using a chopstick or thick skewers then pipe your melted dark chocolate into the centre!

These look so yummy. Think I will stick to the baked doughnut recipes because I can’t deal with using yeast, but the texture of these ones looks amazing!
