Coconut Almond Butter Chocolate Brownies! (Vegan)

Fudgy, dense, rich and coconutty deliciousness all in one brownie.
This one is for all my coconut lovers (and if you don’t like coconut I guarantee this is the recipe to convert you, the coconut is subtle but works so perfectly!)
Ever since I returned from Bali I’ve just been even more obsessed with coconut flavoured things than normal and staring at a jar of Pip and Nut at home inspired me to combine it into the mix, the result, an absolute dream!
Give it a go and I guarantee you’ll discover a new love for coconut if you weren’t obsessed already 🙂
-50g Desiccated Coconut
-20g Coconut flour (I use The Good Stuff)
-60g Almond flour
-50g Cacao powder (I use The Good Stuff)
-20g Sukrin gold (or any other sweetener)
-120g Coconut Almond butter (I used Pip & Nut)
-50-60ml Almond milk
-60g Apple puree
-10g Coconut oil (I use The Good Stuff)
-1/2 TSP Baking soda
1.Pre-heat the oven to 190 degrees. Weigh out all your dry ingredients and pop to one side.
2.Mix together your coconut oil and almond butter then add to the dry mix. Next, add the apple puree and finally the almond milk slowly till you get a thick batter consistency (different branded flour’s absorb different quantities of liquid so do this slowly)
3.Pop the mix in a tin lined with greaseproof paper and into the oven for 25 mins, I like to cook them slightly underdone and allow them to harden as they cool.
