Smarties Cookies

There’s something about smarties that just screams young and carefree- I think it’s because they remind me of my childhood! I was rummaging through our cupboards in the hope to use up what we already have (and for some recipe inspo at the same time) when I came across a tube of smarties and thought to myself, these would make the cutest cookies. I wasn’t wrong! I threw together a vegan cookie dough recipe, again made with pantry ingredients i’m sure everyone has, then added on the smarties to add an element of fun and colour. The recipe itself its sugar-free too so kinder on the teeth and gluten-free when made with gluten-free flour, they also keep really well so why not double the recipe and make a batch for the week?

Ingredients (makes 6):

-70g Coconut flour

-50g All purpose flour

-50g Sukrin Gold

-50g Smooth Cashew butter

-20g Coconut oil

-3 TBSP Almond milk

-1/2 TSP Vanilla extract

-1/2 TSP Baking powder

-Pinch salt

optional extras

-Smarties (I used a small tube full)

Method:

1.Mix together your dry ingredients first then add your melted coconut oil and cashew butter. Add your milk 1 tablespoon at a time ensuring you keep the dough as thick as possible.

2.Divide into 6, roll into balls then flatten with the a fork. Press your smarties into the cookies then pop in the oven on 180 degrees for 15 mins till the edges are golden brown.
