Lotus Biscoff Coconut Tarts (Vegan)

Oh my goodness me, these raw coconut and lotus biscoff tarts were so delicious if I do say so myself. I was not expecting the taste sensation to be as it was but I was ever so pleasantly surprised and am simply in love with this new recipe! It’s fully raw so no need to worry about baking anything and waiting for these to cook, the only waiting around you’ll need to do is 10 minutes for them to set, if you can hold off that long…

I’ve made these using some of my favourite brands at the moment including Coyo– a coconut based raw vegan yogurt brand, Coconut merchant who specialise in a variety of coconut based products (can you notice a theme here?) and Natvia who create wonderful sugar-free sweetener alternatives to use day-to-day. As a Dentist, anything that’s kinder on the teeth is a yes from me! Let’s get making these delicious tarts….

Ingredients (makes 2 large tarts):

For the base:

-12 Crushed digestive biscuits

-10g Cacao powder

-10g Natvia sweetener

-10g Dairy free spread

-10g Lotus Biscoff Spread

-10g Coconut oil

For the filling:

-40g Coconut butter (I used Coconut Merchant)

-180g Natural coconut yogurt (I used Coyo)

-40g Desiccated coconut  (I used Coconut Merchant)

Method:

1.Crush your digestives (I put them in the blender for a few seconds!) add your cacao and mix. Combine your spread, coconut oil and spread by heating for 20-30 seconds then mix through. Divide between two tins (leaving a small tablespoon’s worth spare to decorate) and firmly press down.

2.Melt your coconut butter then combine your desiccated coconut and Coyo. Spoon onto the bases then use the remaining base mix to sprinkle on to the outside. Pop in the freezer to set for 10 mins.
