Gingerbread Loaf (Vegan)
It’s official, Christmas is here! One of my favourite flavours of the season is ginger- it can do wrong and it’s SO versatile! I know everyone usually thinks gingerbread men at christmas but I decided to do something a little bit different..
This recipe is the one for people who say they cant cook/bake. It is the most forgiving recipe ever, you simply throw it all into a bowl, blender or food processor and whizz it up into a smooth batter. Pour into a greased tin and leave to bake whilst you get on with something else. You can dress and frost it however you desire too, it’s also naturally sweetened and full of fibre thanks to the fruit puree and oat flour!
Ingredients:
-250g Oat Flour
-100g Coconut Flour (I use Coconut Merchant)
-200g Sweetener or brown sugar (I use Sukrin Gold)
-100ml Coconut oil
-200ml Almond milk
-80g Pear puree
-3 TSP ground ginger
-1 TSP Cinnamon
-1 TSP All spice
-1 TSP Baking powder
-1/2 TSP bicarbonate of soda
-Pinch salt
3. Place into a loaf tin and bake for about 30 mins until risen. When cooled, frost however you desire!
