Pumpkin, Caramelised Onion, Rosemary Pizza (vegan)
It’s no secret i’m not the biggest pizza fan (I know i’m sorry!) due to the fact i’m not a massive fan of dairy and I generally find stodgy food doesn’t ‘sit’ too well in my tummy. That being said, I was kindly sent some pizza bases by Magioni pizza (which you can grab in Waitrose) that have vegetables infused into their mix. I have absolutely fallen in love with this flavour combination above, sweet from the onion, fragrant from the rosemary and salty from the pumpkin and vegan cheese (I used Violife!).
So simply, delicious and absolutely heart-warming this Christmas, give it a go even if you use a pizza base of your own!
Here’s what you’ll need:
-Magioni pizza base
-80-100g diced pumpkin
-1 large red onion
-1 TBSP tomato puree (double concentrate)
-1 TBSP Beetroot infused ketchup (trust me on this!)
-Hand ful of fresh rosemary
-Vegan cheese (I used Violife)
Method:
1.Pre-heat your oven to 180 degrees, cut your pumpkin into small chunks and spray with a little oil then bake for 20 mins until soft.
2.Assemble your pizza! Add the puree mixed with the ketchup, layer up your pumpkin, red onion, cheese and finally, the fresh rosemary
3.Pop in the oven until crispy (I like how it looks after about 10-12 mins!)
