Cashew Blueberry Vegan Pancakes
Cashew butter smothered, thick, fluffy and delicious vegan pancakes with fresh blueberries and a homemade date cacao syrup. An absolute taste sensation if you ask me and perfect for the month of veganuary (or any month to be honest 😉 )
Anyone skeptical to try vegan food really has yet to give one of these recipes a go because they are truly unbelievably 100% delicious, you’d never enough know you missed any animal products at all.
Both the pancakes and the syrup contain minimal ingredients which are both cheap and easy to source too so there’s really no excuse for you not giving them a go 😉
For the Pancakes:
-1 Small tub Coyo
-130g All purpose flour
-20g Coconut flour
-1 TSP Baking powder
-100ml Non-dairy milk
-5 Large medjool dates
-8 TBSP boiling water
-1 TSP Cacao powder
1.Blend your wet pancake ingredients on high speed, the longer you blend the fluffier they’ll be. Gently sift then fold through the flour keeping as much air in the mix as possible then fry them in coconut oil on a very hot pan.
2.Chop your dates as small as possible and place in a small saucepan, add the water and Cacao and simmer on a low heat till it thickens. Add more water if it evaporates too quickly then blend to get rid of any lumps.
3.Assemble your stack, add cashew butter, fresh berries, drizzle in syrup & tuck in 🤤
