Dark Chocolate Coffee Cake

I was kindly sent some delicious new Coffee flavoured dark chocolate by Heavenly Chocolate and simply had to make something with it ASAP. Anyone who knows me knows how much I LOVE coffee flavours but have never really grown to coffee chocolate, how wrong I was about this bar.

Creamy, smooth and a subtle coffee aftertaste that really hit the spot. I adore this chocolate for many reasons but what comes up top for me is the fact it’s totally sugar-free! I’m all for sugarfree treats as they’re kinder on the teeth and i’m not the kind of Dentist that would ever tell you not to enjoy what you love, just make sure you brush twice a day for 2 mins with a fluoride toothpaste of course 😉

So without further ado, here’s the gorgeous vegan recipe for you to try yourself- it’s quick, easy and really hits the spot!

Ingredients: 

-100g Coffee infused dark chocolate (I used Heavenly SF Chocolate)

-180g All-purpose flour
-120g sweetener (I use Sukrin)
-50g cacao powder
-250ml Soy milk (Almond would also work)
-1 TSP Vanilla extract
-80g Coconut oil
-1 TSP Baking soda
-1 TSP Baking powder
-Pinch of salt
-1 teaspoon vinegar
Method:
1.Pre-heat your oven to 180 degrees, mix your dry ingredients in one bowl and pop to the side.
2.Melt your chocolate and coconut oil together, mix through the dry ingredients and slowly add the milk till you reach desired consistency.
3.Bake for 25 minutes and allow to cool before slicing and topping with whatever your heart desires!
