Hold your horses, the first of the autumnal recipes are coming your way! These cookies are a guaranteed hit with anyone and everyone (especially peanut butter lovers like myself 😉 ) They barely take any prep time or fancy ingredients plus, cook in no time too.
I’ve used a few of my favourite brands which i’m sure you’ll notice, making them kinder on the teeth with zero compromise in flavour!

Ingredients (makes 9 large cookies):
100g coconut oil (I use Coconut Merchant)
300g Natvia
150g pumpkin puree
2 eggs
300g plain flour
1 TSP baking powder and bicarbonate of soda
2 TSP cinnamon
1/2 TSP nutmeg
1/2 TSP cloves
1/2 TSP salt
1 TSP vanilla extract
180g Peanut Butter
Chocolate chunks (I used Divine Chocolate)
Method:
1.Preheat your oven to 180 degrees then mix all your dry ingredients.
2.Add your pumpkin, eggs then mix till well combined.
3.Seperate the mix into 18 little balls, flatten out 9 of them then measure out 20g portions of peanut butter to place in the middle of each one.
4.Top with the remaining 9 balls ensuring to cover the serving of peanut butter, place in the oven for 12-15 minutes then remove and allow to cool.
