White Chocolate Snickers Cheesecake (Vegan)

As we enter a new year, what a better time to experiment with vegan desserts that are that extra bit better for you too.
You need this easy dessert in your life! I’m SO excited to share it with you today because it is one of my favorites! You are going to love how easily these Healthy No-Bake Cheesecakes come together (hello no-bake!) because if you’re anything like me, I simply don’t have hours to spend in the kitchen anymore
Plus, they have no refined sugar (thanks to sugar-free biscuits in sainsburys), and they are chock-full of protein and healthy fat. While it’s egg-free and dairy-free, the texture is perfect and it tastes just like a traditional no-bake cheesecake dessert, if not better, and i’ve used my favourite dairy-free cream cheese by Nush!
Ingredients
For the base:
200g Digestive biscuits
200g Oaty rounds
50g Cacao powder
200g Coconut Oil
For the filling:
600g Natural Nush vegan cheese
200g Dairy free white chocolate
250g Crunchy peanut butter
To decorate:
Melted chocolate
Peanuts
Snickers (optional)
Method:
1.Combine your ingredients for the base in a blender and mix till you have a crumb like texture, empty onto a lined tin and press down firmly
2.Melt together your white chocolate and peanut butter, stir through the cream cheese and layer onto the base. Decorate as you desire then place in the fridge to set for 2 hours minimum.
