EDAMAME SWEET POTATO SATAY STEW

A colourful comforting dish full of flavour, texture and made with a handful of simple ingredients!
Makes 2 portions for you to enjoy with another person or for you to keep in fridge for another meal. You can serve it up alone as the sweet potato is rather filling or alongside some rice if you’re feeling super hungry!
Ingredients:
200g sweet potato
200g edamame beans
60g smooth peanut butter
1 TBSP Tamari or soy sauce
1 TBSP coconut oil
1 TBSP Garam masala
1 TBSP garlic powder
Chilli flakes to taste
3 TBSP Peanut flour
200ml coconut milk
200g fresh spinach
Method:
1.Dice your sweet potato into small chunks, place in the microwave for 5 minutes
2.Add them to a saucepan with your edamame and all other ingredients except the coconut milk
3.When well combined after a few minutes add the coconut milk and simmer on a low heat for 10-15 mins- remove and tuck in
