Sweet BBQ Baked Eggs with Sweet potatoes and button mushrooms!
With my ever-growing love for mushrooms and lack of ingredients available at the shop these days, my creative imagination threw together this dish which turned out surprisingly delicious that it would only be fair for me to share the recipe with you. It’s very easy and straight-forward to follow, you won’t need anything fancy and the dish is one of the meals you can enjoy at any time of the day.

1 Red onion
1 Large tomato
300g Sweet potato (diced)
200g Button Mushrooms
50g Tomato puree
2 TBSP Sweet BBQ Sauce
1 TBSP Smoked paprika
1 TBSP Garlic granules
1 TBSP BBQ seasoning
Chilli to taste
1.Pre-heat the oven to 180 degrees then pop your diced sweet potato in the microwave for 8 minutes while you chop your remaining veg. Add the onions, mushrooms and tomato to a non-stick pan with a little water (or oil of you prefer) and soften for a few minutes
2.Add your sweet potatoes when heated, then all the remaining ingredients except for the eggs. Pour in 100ml of water then allow to simmer and thicken for 5-8 mins
3.Transfer your BBQ mix into an oven proof dish, create 2 small wells then crack 2 eggs into them before placing the dish in the oven.
4.Keep a close eye on your eggs for 8-10 mins as you don’t want to over cook them (because who doesn’t love runny yolk?!) when the egg whites are firm, remove from the oven then garnish with fresh coriander and chilli if desired.
