Sweetcorn Fritters! (Gluten Free)
I’ve alwaysssss wanted to make these! Truth be told if I’m out for brunch and these are on the menu, you can guarantee I’ll order them 💁🏻♀️They’re just my absolute favourite and can’t believe how easy they were to make all along.
I definitely winged it and only used 3 main ingredients but my god they were absolutely delicious… who’d like to join me for a plate or better still, make your own and not have to share :p
Ingredients:
1 Egg
150g Drained tinned sweetcorn
40g Flour (used GF flour if needed)
1/2 TSP Garlic, Salt, Pepper
Pinch of Chilli
Method:
1.Drain your tinned sweetcorn then combine with the egg, flour and seasonings
2.Measure out a tablespoon of the mix into a rough ball then fry on a very hot pan gently pressing down to flatten, turn over after a few minutes and ensure the sweetcorn is brown and crisp. Layer up with avocado, yogurt, poached egg.. the possibilities are endless!
