The Ultimate Veggie Burger

Soft brioche buns with homemade cajun bean patties, smoked aubergine puree, avo, red onion rings and aioli.
It may be BBQ season but that doesn’t mean you can’t enjoy it any less without meat.. with burgers as delicious as these, even meat eaters will be converted. Give them a go and let me know how you get on 🙂
Ingredients:
for the patty
200g re-fried beans
200g sweetcorn
100g butterbeans
1 egg
20g flour
1 TBSP cajun spice
1 TBSP paprika
1/2 TBSP garlic
 1/2 TSP salt and pepper
for the aubergine puree
1 Aubergine
1 TBSP garlic puree
1/2 TBSP olive oil
1/2 TSP cumin
1 TBSP tahini

1 large avocado
1 large red onion
Aioli
Method:
1.Pre-head your oven to 180 then score your aubergine through the middle. Add the garlic puree, cumin, olive oil then wrap in foil and place in the oven for 30 minutes.
2.Whilst that is cooking, combine all your patty ingredients into a bowl, adding the egg last to hold the mixture together. Separate into 6 balls and flatten to create a patty, place in the oven for 20 minutes, turning halfway.
3.When the aubergine is ready, remove from the foil casing and empty the inside with a spoon discarding the skin. Add the tahini and mix thoroughly.
4.Mash your avocado with a fork, layer a tablespoon on the bottom of the brioche bun, next add a tablespoon of your aubergine puree, your veggie patty, red onion and finally, a good dollop of aioli before the final half of your brioche bun. Tuck in and enjoy!!
