Coconut, Chilli & Lime kale salad
The most delicious salad you will ever eat, trust me! When people think salad, they automatically assume I mean a sad bowl of green leaves.. this is quite the opposite.
Bursting with texture, flavour, ingredients, colour this ‘salad’ will change anyone’s mind.
This was one of those recipes where I threw everything into a bowl hoping for the best & it was bloody delish! You can top with your protein source of choice … I made stuffed sweet potato on the side!
The base is kale and cous cous, with edamame, sweetcorn, avocado and pomegranate topped with the most delicious lemon lime, chilli coconut dressing- a dream. You simply must give it a go 😀
Ingredients:
3 handfuls of curly kale (remove the bitter stalks so it’s just the leaves)
100g cous cous
150g edamame
1 avocado
150g pomegranate
150g sweetcorn
Half a lime
Half a lemon
100ml coconut milk
1 TBSP chilli flakes
To make:
1.Massage the kale with the lemon juice till it’s nice and wilted (that’s the trick to get kale less rough) use your hands and really squeeze hard, you’ll feel it soften.
2.Add the cous cous, pomegranate, peas, sweetcorn, chunks of avo
3.Mix the lemon, coconut milk and chilli with a whisk then drizzle over the salad and mix well. Tuck in and enjoy!!
